Beet Salad With Goat Cheese And Peaches Recipe

How to make it

  • Coat peaches lightly with olive oil. Place on hot grill and sear on cut side. Turn and cook for an additional minute and remove from grill.
  • Slice peaches and place in large bowl.
  • Top with beets,goat cheese,onion and lettuce. Toss with vinegar and olive oil. Taste and adjust flavors.

    I have never had beets except pickeled from a jar. Those were not my favorites. I have recently seen so many interesting looking recipes - like this one - featuring fresh beets. I'm going to have to break out and see if I like fresh beets better.
