Noodle and Shrimp Salad

- 1 large grapefruit peeled sectioned and chopped shopping list
- 1/2 cup chopped peanuts shopping list
- 1 large tomato peeled seeded and chopped shopping list
- 3 scallions minced shopping list
- 1/3 cup chopped fresh mint shopping list
- 1/2 cup chopped fresh cilantro shopping list
- 1 tablespoon finely-minced fresh lemongrass shopping list
- 1 teaspoon dried red chili flakes shopping list
- 1 garlic clove finely minced shopping list
- 1 tablespoon brown sugar shopping list
- juice of 2 limes shopping list
- 2 tablespoons fish sauce shopping list
- 8 ounces rice vermicelli soaked in hot water for 15 minutes shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 24 large shrimp peeled and grilled shopping list
How to make it
- In a large bowl combine grapefruit, 1/3 cup of the peanuts, tomato, scallions, mint, 1/3 cup of the cilantro and lemongrass. In a small bowl combine chili, garlic, sugar, lime juice and fish sauce. Bring a large pot two-thirds full of water to a boil. Drain noodles and plunge them into boiling water. When water returns to a boil drain noodles and rinse well. Toss noodles in the bowl with the grapefruit mixture, dressing, salt and pepper. Place the shrimp on top of noodles and garnish with remaining peanuts and cilantro.
