Pumpkin Waffles

- 1-1/2 cups sifted flour shopping list
- 2 tablespoons sugar shopping list
- 3 teaspoons baking powder shopping list
- 1/2 teaspoon ground cinnamon shopping list
- 1/4 teaspoon salt shopping list
- 1/8 teaspoon ground nutmeg shopping list
- 1-3/4 cup milk shopping list
- 1 cup canned or pureed cooked pumpkin shopping list
- 1/3 cup vegetable oil shopping list
- 2 egg yolks shopping list
- 2 egg whites stiffly beaten shopping list
How to make it
- On sheet of waxed paper sift together flour, sugar, baking powder, cinnamon, ginger, salt and nutmeg then set aside. In medium bowl mix milk, pumpkin, oil and egg yolks until well blended. Add dry ingredients then stir just until well blended then gently fold in stiffly beaten egg whites. Bake in waffle iron according to manufacturer's directions. Serve hot with maple syrup.
