Ingredients
  • 4- shallots or 1/4 cup red onion
  • 1/2 red bell pepper diced
  • i can artichoke hearts drained halves or pieces
  • 1 bag- fresh spinach
  • 4oz-8oz gruyere cheese grated, i use 4
  • 8-eggs
  • half and half 1-cup
  • puff pastry
  • nutmeg
  • salt and pepper

Directions
  1. Saute shallots and red bell pepper in 1 tbspn evoo about 4 minutes add spinach until wilted about 2 minutes. let cool
  2. in bowl whisk 8 eggs add 1 cup half and half and pinch fresh nutmeg sea salt and pepper
  3. in pie dish layer puff pastry in buttered dish fine if it hangs over
  4. on top of shell pour in artichokes then add shallots and red bell pepper pour egg mixture over it and sprinkle all over top with gruyere shredded cheese
  5. bake in preheated oven 350,bake until light golden brown around 50-55 minutes
