How to make it

  • 1 Preheat oven to 425º. Rub both sides of chicken with salt and pepper. Place chicken in a
  • 13” x 9” roasting pan. Bake chicken for 10 minutes. Place pan on a wire raack. Reduce oven temperature to 350º.
  • 2 Meanwhile, in a large bowl, combine zucchini, mushrooms, tomatoes, onions, garlic, basil, and bay leaf.
  • 3 Spoon vegetable mixture evenly over chicken. Cover pan with foil; bake for 35 minutes.
  • Uncover pan and bake until chicken is golden and no longer pink, about 40 minutes longer. Remove bay leaf. Serve immediately.
  • Short Cut:
  • To save time, omit the baking Step1. Preheat oven to 425º. Place uncooked chicken in prepared pan and add vegetable mixture. Bake chicken as directed in Step 3.
