  • Ingredients:
  • 3 ½ Lbs. Chicken, skinned and boned cut into 8 pices
  • ¼ tsp. Salt
  • ¼ tsp. Freshly ground black pepper
  • 2 medium Zucchini, cut into ¼ inch chunks ( about 4 cups )
  • 2 cups halved mushrooms
  • 1can ( 28oz ) whole peeled tomatoes, coarsely chopped
  • 1 medium yellow onion, chopped ( about 1 cup )
  • 3 cloves garlic, finely chopped
  • 2Tbs. Fresh basil or 2 tsp. Dried basil
  • 1 Bay leaf

Directions
  1. 1 Preheat oven to 425º. Rub both sides of chicken with salt and pepper. Place chicken in a
  2. 13” x 9” roasting pan. Bake chicken for 10 minutes. Place pan on a wire raack. Reduce oven temperature to 350º.
  3. 2 Meanwhile, in a large bowl, combine zucchini, mushrooms, tomatoes, onions, garlic, basil, and bay leaf.
  4. 3 Spoon vegetable mixture evenly over chicken. Cover pan with foil; bake for 35 minutes.
  5. Uncover pan and bake until chicken is golden and no longer pink, about 40 minutes longer. Remove bay leaf. Serve immediately.
  6. Short Cut:
  7. To save time, omit the baking Step1. Preheat oven to 425º. Place uncooked chicken in prepared pan and add vegetable mixture. Bake chicken as directed in Step 3.
