Chicken Roma Bake

- Ingredients: shopping list
- 3 ½ Lbs. chicken, skinned and boned cut into 8 pices shopping list
- ¼ tsp. salt shopping list
- ¼ tsp. Freshly ground black pepper shopping list
- 2 medium zucchini, cut into ¼ inch chunks ( about 4 cups ) shopping list
- 2 cups halved mushrooms shopping list
- 1can ( 28oz ) whole peeled tomatoes, coarsely chopped shopping list
- 1 medium yellow onion, chopped ( about 1 cup ) shopping list
- 3 cloves garlic, finely chopped shopping list
- 2Tbs. fresh basil or 2 tsp. dried basil shopping list
- 1 Bay leaf shopping list
How to make it
- 1 Preheat oven to 425º. Rub both sides of chicken with salt and pepper. Place chicken in a
- 13” x 9” roasting pan. Bake chicken for 10 minutes. Place pan on a wire raack. Reduce oven temperature to 350º.
- 2 Meanwhile, in a large bowl, combine zucchini, mushrooms, tomatoes, onions, garlic, basil, and bay leaf.
- 3 Spoon vegetable mixture evenly over chicken. Cover pan with foil; bake for 35 minutes.
- Uncover pan and bake until chicken is golden and no longer pink, about 40 minutes longer. Remove bay leaf. Serve immediately.
- Short Cut:
- To save time, omit the baking Step1. Preheat oven to 425º. Place uncooked chicken in prepared pan and add vegetable mixture. Bake chicken as directed in Step 3.
