Stir Fried Spicy Clams

- 500gms - clam shopping list
- 1 tbs - dried shrimps soaked and chopped shopping list
- 3 - stalks curry leaves shopping list
- 1 -stalk lemon grass smashed shopping list
- 3 -slices ginger shopping list
- 2-3 - tbs oil shopping list
- 3 -red chillis chopped shopping list
- little water shopping list
- (seasoning A) shopping list
- 1tbs oyster sauce shopping list
- a dash of salt and pepper shopping list
- 1 tbs sugar to taste shopping list
- 2tbs dark soya sauce (for colour) shopping list
- (Thickening - Mixed) shopping list
- 1 tsp corn flour shopping list
- 1tbsp water shopping list
How to make it
- Soak clams in lightly salted water, for 15-20mnt.(this is to remove impurities) clean clams under running tap water and drain in a colander.
- heat oil , saute curry leaves, dried shrimps, lemon grass, ginger and chilli until fragrant
- add clams and seasoning (A). Stir well to mix. add in a little water
- cover wok with lid and cook till the clams are opened. thicken with corn flour mixture then dish out to served
