Ingredients
  • 500gms - Clam
  • 1 tbs - dried shrimps soaked and chopped
  • 3 - stalks curry leaves
  • 1 -stalk lemon grass smashed
  • 3 -slices ginger
  • 2-3 - tbs oil
  • 3 -red chillis chopped
  • little water
  • (seasoning A)
  • 1tbs oyster sauce
  • a dash of salt and pepper
  • 1 tbs sugar to taste
  • 2tbs dark soya sauce (for colour)
  • (Thickening - Mixed)
  • 1 tsp corn flour
  • 1tbsp water

Directions
  1. Soak clams in lightly salted water, for 15-20mnt.(this is to remove impurities) clean clams under running tap water and drain in a colander.
  2. heat oil , saute curry leaves, dried shrimps, lemon grass, ginger and chilli until fragrant
  3. add clams and seasoning (A). Stir well to mix. add in a little water
  4. cover wok with lid and cook till the clams are opened. thicken with corn flour mixture then dish out to served
