Spinach and feta squares

- 3 (10 oz.) pkg. frozen chopped spinach, defrosted and well shopping list
- drained shopping list
- 1/2 lb. feta cheese, crumbled shopping list
- 7 eggs shopping list
- 1/2 lb. Apollo filo leaves shopping list
- 1/4 c. fresh Italian parsley, chopped shopping list
- 1 bunch scallions, sliced and sauteed in oil until soft shopping list
- 1/4 lb. or more melted butter shopping list
- 2 tsp. salt shopping list
- pepper to taste shopping list
How to make it
- Preheat oven to 375 degrees. Bring dough to room
- temperature.
- Beat eggs well. Add spinach, cheese, parsley, scallions,
- salt and pepper. Brush sides and bottom of 9x13 inch pan
- with melted butter. Carefully place 1 sheet of dough in pan
- with dough extending up sides and ends. Brush with butter.
- Add another piece of dough. Repeat using 10-12 pieces of
- dough; save 3 sheets for top.
- Add spinach mixture. Top with 3 pieces of dough buttering
- each layer. Fold dough from bottom layers down onto top
- layers. Brush with butter. Cut 3 slits in top. Bake for 50
- minutes. This is delicious to serve to a crowd.
