PASTA CRAB LOUIS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Metzger Estate in Grand Prairie, Texas in 1994.

Ingredients
  • 4 ounces uncooked macaroni
  • 1/2 cup mayonnaise
  • 1/4 cup whipping cream
  • 2 tablespoons lemon juice
  • 1 teaspoon paprika
  • 2 teaspoons Worcestershire sauce
  • 2 tablespoons ketchup
  • 1/4 teaspoon salt
  • 1/8 teaspoon cracked pepper
  • 8 ounces crab meat
  • 2 green onions including tops
  • 2 hard boiled eggs
  • 6 large lettuce leaves

Directions
  1. Cook macaroni and rinse in cold water and drain well then chill.
  2. Combine remaining ingredients except crab, green onions, eggs and lettuce.
  3. Mix well and chill.
  4. Combine macaroni and crab and place on lettuce leaves then top with dressing.
  5. Garnish with diced green onions and hard boiled eggs.
