Ingredients
  • I1 lb ground sirloin
  • 12 oz ground pork
  • 12 oz ground veal
  • 3 tbs chopped fresh parsley
  • 2 tsp white pepper
  • 1 1/4 cup Italian bread crumbs
  • 1 1/3 cup grated romano cheese
  • 7 large eggs
  • 2 28oz cans San Marzano whole plum tomatoes
  • 1 medium onion minced
  • 3 tbs olive oil
  • 3 cloves minced garlic
  • 1/2 cup chopped fresh basil
  • salt and pepper to taste
  • room temperature ricotta cheese
  • mixed greens
  • balsamic vinegarette

Directions
  1. Carefully combine 1st 8 ingredients
  2. Divide into 8 8oz balls
  3. Brown on all sides in deep sided saute pan with a small amount of EVOO
  4. Remove from pan and drain grease
  5. Add minced onion to pan, saute
  6. Crush tomatoes by hand into large bowl
  7. Add onions, olive oil garlic and basil to tomatoes
  8. Return meatballs to pan
  9. Pour sauce over meatballs and bring to a boil
  10. Reduce heat and simmer for 2 hours
  11. Turn meatballs 2 or 3 times
  12. Serve 1 meatball with scoop of ricotta and balsamic greens
