How to make it

  • Heat leftover pork with jar of salsa in skillet on stove
  • Make rice according to package directions
  • Warm tortillas for 1 minute in microwave to soften
  • Spread re fried beans on warm tortilla
  • Layer Spanish rice on top of beans
  • Layer pulled pork on top of rice
  • Sprinkle with cheese
  • Tuck in ends of tortilla shell and rolls up
  • Place in greased 9x13 baking dish (microwave safe)
  • Pour enchilada sauce over top
  • Sprinkle remaining cheese on top
  • Cover with plastic rap
  • Place in microwave for 5 min.
