Pulled Pork Enchiladas

- Leftover pulled pork shopping list
- 1jar mild or medium salsa (any brand is fine) shopping list
- 1 pkg Lipton Spanish rice shopping list
- 1large can spicy fat-free re fried beans shopping list
- 8 flour tortilla shells shopping list
- 1 pkg (4 cup) Mexican blend cheese shopping list
- 1 large can enchilada sauce shopping list
How to make it
- Heat leftover pork with jar of salsa in skillet on stove
- Make rice according to package directions
- Warm tortillas for 1 minute in microwave to soften
- Spread re fried beans on warm tortilla
- Layer Spanish rice on top of beans
- Layer pulled pork on top of rice
- Sprinkle with cheese
- Tuck in ends of tortilla shell and rolls up
- Place in greased 9x13 baking dish (microwave safe)
- Pour enchilada sauce over top
- Sprinkle remaining cheese on top
- Cover with plastic rap
- Place in microwave for 5 min.
