How to make it

  • Add sour cream and corn relish in a saucepan and heat stirring constantly over low heat
  • Add the chives and continue to stir and heat over low
  • When warm add in the cheese and continue to heat over a low to medium heat for 3-5 minutes stirring constantly
  • Serve with Corn Chips/Tortilla Chips or Bread
  • If serving with Bread, slice the french stick horizontally and brush with olive oil, placing under the grill for 5 minutes or until crisp and serve immediatly with the dip.

    This sounds really good! I bet if you dry-toasted a Tbl or 2 of flour until it was golden, then proceeded with the recipe, using lite sour cream, it would work really well! I use the toasted flour to thicken all sorts of things...gravies, sauces, etc, and it adds a nice richness, as if you were using a roux (but without all the extra fat!)
