Another great use for leftovers from my smoked pork loin; the bar b que flavor from the pork is a great twist on the Cuban Sandwich!

Ingredients
  • 8 slices thick sliced bread (I used 9 grain bread)
  • 2 pounds thinly sliced smoked pork loin, trimmed of fat
  • 4 slices swiss cheese
  • mayonnaise
  • dijon mustard
  • sliced dill pickles
  • butter

Directions
  1. Spread mayonnaise and dijon mustard on one side of each bread slice.
  2. Layer pork, Swiss, and pickle slices on 4 bread slices.
  3. Top with remaining bread slices.
  4. Butter outsides of sandwiches.
  5. Place on 275 degree griddle and press hot iron skillet on top of sandwiches to flatten. Skillet can be weighed down with a brick to help flatten sandwiches.
  6. Cook until meat is warmed, cheese is melted and bread is browned.

Alterations


I use a good olive oil to brush on the outsides of my bread instead of butter. The olive oil seems to give your sandwich the crunch that a panini sandwich has when ordering one out.
