How to make it

  • - Preheat oven to 180°C
  • - Boil some water in a big saucepan, cook pasta. Drain and set aside.
  • - Meanwhile, in a medium saucepan, cook pancetta and leek 4-5 minutes until leek is soft. Stir in flour and cook another minute. Remove from heat.
  • - Gradually stir in the milk. Return to the heat until it boils and thickens slightly. Take off the heat again and stir in cheddar, Parmesan and parsley.
  • - Combine sauce mixture with the cooked pasta and spoon into a 1-litre baking dish.
  • - Sprinkle breadcrumbs on top, then a little more Parmesan.
  • - Bake for 30 minutes, until lightly brown on top.
  • - Serve with salad.
