Ingredients
  • 125 g dried macaroni pasta (1 1/3 cups approx)
  • 100 g pancetta (or bacon), chopped (about 4 slices)
  • 1 leek, halved and sliced
  • 5-or-so mushrooms, sliced
  • 1 Tbsp plain flour
  • 1 cup milk
  • 40 g grated cheddah chez (about 1/3 cup)
  • 1 Tbsp Parmesan chez
  • 1 Tbsp parsley, chopped
  • bread crumbs
  • more Parmesan

Directions
  1. - Preheat oven to 180°C
  2. - Boil some water in a big saucepan, cook pasta. Drain and set aside.
  3. - Meanwhile, in a medium saucepan, cook pancetta and leek 4-5 minutes until leek is soft. Stir in flour and cook another minute. Remove from heat.
  4. - Gradually stir in the milk. Return to the heat until it boils and thickens slightly. Take off the heat again and stir in cheddar, Parmesan and parsley.
  5. - Combine sauce mixture with the cooked pasta and spoon into a 1-litre baking dish.
  6. - Sprinkle breadcrumbs on top, then a little more Parmesan.
  7. - Bake for 30 minutes, until lightly brown on top.
  8. - Serve with salad.
