Nifty Mac And Cheese For Grown Ups

- 125 g dried macaroni pasta (1 1/3 cups approx) shopping list
- 100 g pancetta (or bacon), chopped (about 4 slices) shopping list
- 1 leek, halved and sliced shopping list
- 5-or-so mushrooms, sliced shopping list
- 1 Tbsp plain flour shopping list
- 1 cup milk shopping list
- 40 g grated cheddah chez (about 1/3 cup) shopping list
- 1 Tbsp Parmesan chez shopping list
- 1 Tbsp parsley, chopped shopping list
- bread crumbs shopping list
- more Parmesan shopping list
How to make it
- - Preheat oven to 180°C
- - Boil some water in a big saucepan, cook pasta. Drain and set aside.
- - Meanwhile, in a medium saucepan, cook pancetta and leek 4-5 minutes until leek is soft. Stir in flour and cook another minute. Remove from heat.
- - Gradually stir in the milk. Return to the heat until it boils and thickens slightly. Take off the heat again and stir in cheddar, Parmesan and parsley.
- - Combine sauce mixture with the cooked pasta and spoon into a 1-litre baking dish.
- - Sprinkle breadcrumbs on top, then a little more Parmesan.
- - Bake for 30 minutes, until lightly brown on top.
- - Serve with salad.
