Fiesta Stew

- 1 tbl vegetable oil shopping list
- 1/2 yellow onion, diced shopping list
- 1/2 red onion, diced shopping list
- 6 cloves fresh garlic, minced shopping list
- 5 jalapeños, diced shopping list
- 1 1/2 cans green beans shopping list
- 1 can stewed tomatoes shopping list
- 1 medium & 2 small fresh tomatoes, cut in 6ths shopping list
- 15 oz leftover sirloin steak, cut in bite size pieces::(leave it out to make it a vegetarian dish) shopping list
- 1 tsp cumin shopping list
- 1 tsp coriander shopping list
- 2/3 tsp cayenne pepper shopping list
- 1/4 tsp chinese five spice (anise, cinnamon, star anise, cloves, ginger) shopping list
- 1/4 tsp fresh ground garlic sea salt shopping list
- 1/2 tsp ground white pepper shopping list
- 1 bay leaf shopping list
- 1/4 cup of fresh cut parsley shopping list
- fresh ground pepper on top shopping list
- fresh ground cayenne pepper on top shopping list
- 1 lime, cut into small wedges shopping list
- rice shopping list
- vegetable oil shopping list
- water shopping list
How to make it
- Add vegetable oil to a large saucepan
- sautee onions and garlic on medium heat for 5 minutes, stirring constantly (put about 1/5 of diced onions to side, don't sautee)
- turn heat to medium low and add jalapenos (put one diced jalapeno on side, don't sautee)
- sautee for another 4-5 minutes
- add green beans, tomato can, fresh tomatoes WITH THE JUICES FROM THE CAN!!!!!
- make sure vegetables are covered with liquids, if not enough liquid, add water in 1/4 cup amounts
- next add steak
- stir ingredients together and allow to heat up over medium heat
- now add the onions and jalapenos that you put aside earlier
- then add all the spices (more or less, however spicy you want it)
- cover the stew and allow to cook medium-low to low for 30-40 minutes to allow flavors to mingle
- serve over white rice and squeeze a lime on top!
- for the rice:
- add 1 part rice, 2 parts water to a saucepan
- add vegetable oil
- allow to boil
- turn down to low rolling boil, cover
- allow to cook for 20-25 minutes
- check to make sure the rice is consistently soft
- serve with stew on top
- enjoy. this dish will have your taste buds kickin.
