Ingredients
  • 1 tablespoon olive oil
  • 4 salmon fillets
  • Lemon pepper seasoning
  • 14 ounces seasoned chicken broth with Italian herbs
  • 3 tablespoon balsamic vinegar
  • 1-1/2 tablespoons cornstarch
  • Hot cooked rice cooked without salt

Directions
  1. Heat oil in skillet then add salmon skin side up and cook until browned about 5 minutes.
  2. Turn salmon and season with lemon pepper then add 1/2 cup broth and heat to a boil.
  3. Cover and cook over low heat 5 minutes or until done then remove salmon and keep warm.
  4. Mix remaining broth, vinegar and cornstarch.
  5. Add to skillet and cook and stir until mixture boils and thickens.
  6. Place rice in bowls and top with salmon then spoon sauce over all.
