Taco Filled Pasta Shells Recipe
I am frequently asked to bring this to pot luck dinners. Easily doubled and baked in a 13x9 inch baking pan.

Ingredients
  • 1 pound lean ground beef
  • 1 envelope taco seasoning mix
  • 4 ounces cream cheese, cubed
  • 12 uncooked jumbo pasta shells
  • 2 tablespoons butter, melted
  • 1 cup salsa
  • 1 cup taco sauce
  • 1 cup cheddar cheese, shredded
  • 1 cup Mozzarella cheese, shredded
  • 1 1/2 cups tortilla chips, crushed (optional)
  • 1 cup sour cream for garnish
  • 1/2 cup green onions, thinly sliced, for garnish

Directions
  1. In large skillet, brown ground beef.
  2. Add taco seasoning and prepare as directed on package.
  3. Add cream cheese to skillet.
  4. Cover and simmer 5 to 10 minutes or until cream cheese is melted.
  5. Transfer to a bowl and chill 1 hour.
  6. Cook pasta shells according to package directions.
  7. Drain and gently toss cooked shells with melted butter.
  8. Fill each shell with about 3 tablespoons beef mixture.
  9. Spoon salsa in bottom of greased 9 inch baking pan.
  10. Arrange filled shells over.
  11. Pour taco sauce over shells.
  12. Cover and bake at 350 degrees for 30 minutes.
  13. Uncover, sprinkle with cheeses and tortilla chips.
  14. Bake, uncovered 15 minutes or until heated through and cheeses are melted.
  15. Serve with sour cream and green onions on the side.
