Market Fresh Crustless Quiche

- 7 eggs shopping list
- 2 tbsp whole wheat flour shopping list
- 2-3 tbsp bread crumbs shopping list
- 1/4 tsp Magic baking powder shopping list
- 3 tbsp plain organic yogurt shopping list
- 1/4-1/3 cup of grated cheddar cheese shopping list
- 1/4 cup organic smoked ham (diced) shopping list
- 1 tbsp butter (some to grease the pan with too) shopping list
- 2-3 garlic scape (if you cannot find these then use a small clove of garlic) shopping list
- 2 market fresh baby green peppers shopping list
- 1 small tomato shopping list
- salt shopping list
- pepper shopping list
- 2 generous tbsp hickory smoked paprika shopping list
How to make it
- Cut up the scape into little pieces
- Saute scape in butter and salt until for 5 minutes
- Meanwhile...
- Cut up the peppers/tomatoes/grate the cheese
- After five minutes add in half of the peppers to the saute pan (cook until scape is very soft - another 10 minutes or so)
- Meanwhile...
- Preheat the oven to 350 F
- In a medium sized mixing bowl:
- Mix eggs
- Blend in flour, powder, and bread crumbs (I used a hand mixer here)
- Mix in cheese/salt/pepper/paprika
- Dice the ham
- Add ham, raw peppers, tomatoes and your saute mixture (once it is soft enough) to the egg mixture
- Now - all of your friends are in the mixing bowl
- Pour them all into a nice 8-10 inch greased square glass casserole dish
- Bake for about 40 minutes until it's all crispy and a toothpick comes out dry
- (One cool idea is to put these into a muffin tray for mini quiches)
- (Another cool idea is to add some extra breadcrumbs and cheese on top)
