How to make it

  • Pre-heat oven to 375 degrees
  • In a large mixing bowl, combine sugar and oil.
  • Add eggs one at a time, beating well after each addition.
  • Combine the flour, cocoa, baking soda, baking powder and salt in a seperate bowl. Mix well.
  • Gradually add the dry ingredients to the egg mixture, alternating with the milk.
  • Stir in the zucchini and vanilla extract.
  • Pour into a jelly roll pan.
  • Bake at 375 degrees for 25 minutes.
  • While cake is cooling, combine the frosting ingredients. Mix until smooth. Spread over cake while hot.

    I can totally believe your mom won a contest with this cake, it is that good. No one even knows there is zucchini in it until you tell them!

    Hee hee, my mom has the same recipe! and this is very good, I think it's a mom type of recipe!!! My mom won a chocolate cake contest with this recipe many years ago and it was printed in her local paper as Mom's famous Chocolate zucchini cake!!!
