Ingredients
  • BBQ Beef and Bean Casserole
  • 1 Medium onion
  • 4 cloves Garlic
  • 2 tbls Butter or margarine
  • 1/2 lb or 400 grams lean Ground beef
  • 1 can organic baked beans
  • 3 tsp Worchestshire sauce
  • 5 drops Tobasco sauce
  • 1 tsp oregano
  • 1/4 cup ketchup
  • 4 tbls mustard
  • 4 tbls brown sugar
  • 1 cup frozen corn kernels
  • 1 cup cheddar cheese shredded
  • Southern Biscuits (recipe provided or you can use premade)

  • 2 cups all-purpose flour
  • 1/2 tablespoon baking powder
  • 1/2 tablespoon salt
  • 3 tablespoons butter, cold
  • 1/2 cup solid vegetable shortening, cold
  • 1 cups milk

Directions
  1. BBQ Beef and Bean Casserole
  2. Dice onion and garlic then lightly saute in butter, add ground beef and cook until browned and drain well. Add Baked beans, and the next 7 ingredients and allow to simmer for 10 minutes.
  3. Transfer to a medium sized casserole dish and let cool for 10 minutes then cover the top evenly with the chedder cheese. Place 6 unbaked southern bisquits evenly spaced on the top.
  4. cook in a 400 degree oven for 15 minutes or until the biscuits are golden brown.
  5. (If premade biscuits follow cooking process provided by manufacture for temp and time)

  7. Preheat the oven to 400 degrees F.
  8. In a large mixing bowl, combine the flour, baking powder and salt, mix well. Add 2 tablespoons of the cold butter and the cold shortening and work it into the dry ingredients,using your hands, until the mixture resembles coarse crumbs. Stir in the milk. The dough will be sticky. Dust your work surface with some flour. Turn the dough onto the floured surface. Gently fold each side toward the center. Pick up the dough and dust the work surface with additional flour. Return the dough to the floured surface and fold each side towards the center again.
  9. Turn the dough over and press it out to 1-inch thickness. Cut the biscuits, straight down, do not twist the cutter, with a 2 1/4-inch round cookie cutter. Melt the remaining 2 tablespoons of butter and coat both sides of the biscuits with butter, about 1/4-inch apart. Let the biscuits rest for 15 minutes before baking. Bake until golden brown, about 15 minutes.
