Spicy Oat Crusted Chicken With Sunshine Salsa Recipe
SPICY OAT CRUSTED CHICKEN WITH SUNSHINE SALSA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Malta Estate in Bedford, Texas in 1991.

Ingredients
  • 3/4 cup prepared salsa
  • 3/4 cup coarsely chopped orange sections
  • 2 tablespoons canola oil
  • 1 tablespoon margarine melted
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 3/4 teaspoon salt
  • 1-1/2 cups uncooked quick oats
  • 1 egg lightly beaten
  • 1 tablespoon water
  • 4 boneless skinless chicken breast halves
  • Chopped cilantro

Directions
  1. In small bowl combine salsa and orange sections then refrigerate until serving time.
  2. Preheat oven to 375.
  3. In flat shallow dish stir together oil, margarine, chili powder, garlic powder, cumin and salt.
  4. Add oats stirring until evenly moistened.
  5. In second flat, shallow dish beat egg and water with fork until frothy.
  6. Dip chicken into combined egg and water then coat in seasoned oats.
  7. Place chicken on foil lined baking sheet and pat any extra oat mixture onto top of chicken.
  8. Bake 30 minutes or until chicken is cooked through and oat coating is golden brown.
  9. Serve with salsa and garnish with chopped cilantro.
