Brown Rice Peanut Butter Pudding Recipe
BROWN RICE PEANUT BUTTER PUDDING This recipe came from an estate sale. I obtained it when I purchased the family collection from the Staley Estate in Wills Point, Texas in 1982.

Ingredients
  • 3 large eggs
  • 2 cups brown rice cooked
  • 1/2 cup creamy peanut butter
  • 1/3 cup honey
  • 1 tablespoon cinnamon
  • 2 cups milk
  • 1/2 cup dates chopped
  • 1/2 cup raisins

Directions
  1. Combine eggs, cooked rice, peanut butter, honey and cinnamon.
  2. Stir in milk, raisins and dates then turn into baking dish and place dish in larger dish.
  3. Add 1" water to larger pan then bake 25 minutes at 350.
  4. Stir mixture then bake another 25 minutes.
  5. Top with whipped cream and peanuts if desired.
