How to make it

  • Rinse 10 peppers well (do not put your fingers into eyes when preparing!)
  • *Do not lob off ends, leave whole, as is
  • Heat olive oil in medium sized skillet & add whole peppers.
  • Watch carefully, turning after 2-3 minutes
  • Cook on other side, for 2-3 minutes.
  • You don't want them to burn, but the outer skin should be golden.
  • Carefully remove from skillet & drain on paper towels.
  • Place on plate & sprinkle w/T vinegar & salt, as desired.
  • When eating these hot delights, cut the stem end & seeds off & eat with caution!!

Thanx for this authentic recipe !! What I do is make a few piecrings with a fork before frying thus a) minimizing the posibility for the peppers to explode while frying and b) the innersides are also cooked .
