How to make it

  • Preheat oven to 375°F. Grease a 12-cup muffin tin with canola oil spray. In a medium bowl, whisk together brown rice flour, buckwheat flour, flaxseed meal, brown sugar, baking soda, cinnamon, nutmeg, salt and currants.
  • In a separate bowl, combine eggs, oil, applesauce and buttermilk. Whisk flour mixture into egg mixture, just until combined. Spoon batter into the prepared muffin tins and bake for 25 to 35 minutes or until a toothpick inserted in the center of a muffin comes out clean. Cool muffins in pans for 5 minutes before transferring to a wire rack to finish cooling
