Purple Peruvian Potatoes

- 2 pounds Peruvian purple potatoes scrubbed shopping list
- 1/2 cup extra virgin olive oil shopping list
- 1 tablespoon Mexican oregano shopping list
- 1 tablespoon minced garlic shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
How to make it
- Preheat oven to 400 then cut potatoes in half and place them in a bowl.
- In another bowl mix olive oil, oregano, garlic, salt and pepper.
- Mix well and add them to oil mixture and toss well.
- Spread potatoes on a sheet pan then roast 30 minutes.
- Sprinkle with cilantro and serve while hot.
