Creamy portobello side

- 6 medium sized portobello mushrooms sliced 1/2 cm thickness shopping list
- 1/2 C light cream shopping list
- 2 cloves of garlic diced shopping list
- 1 red onion - diced shopping list
- olive oil shopping list
- 1 C frozen spinach defrosted shopping list
- Small handful chopped cashews shopping list
- salt & pepper to taste shopping list
- 8 quatered cherry tomatoes shopping list
How to make it
- Heat enough olive oil in a pan to just cover the bottom of the pan. Sprinkle salt over the base of the pan and add the diced garlic cloves.
- When they start to sizzle add the chopped portobellos (chopped to approx 1/2 cm thickness) and the onion.
- Cook over a moderate/high heat until onions are becoming translucent & mushrooms softened.
- Reduce the heat and add the spinach, cream & cashews.
- Add pepper and more salt to taste.
- Cook until the cream has reduced.
- Add the cherry tomatoes for the last 3 minutes so they become tender yet retain their shape.
