How to make it

  • Heat enough olive oil in a pan to just cover the bottom of the pan. Sprinkle salt over the base of the pan and add the diced garlic cloves.
  • When they start to sizzle add the chopped portobellos (chopped to approx 1/2 cm thickness) and the onion.
  • Cook over a moderate/high heat until onions are becoming translucent & mushrooms softened.
  • Reduce the heat and add the spinach, cream & cashews.
  • Add pepper and more salt to taste.
  • Cook until the cream has reduced.
  • Add the cherry tomatoes for the last 3 minutes so they become tender yet retain their shape.
