Gazpacho With Shrimp And Avocado Relish

- 1 lb peeled and deveined large shrimp shopping list
- 3/4 c chopped red bell pepper shopping list
- 1/4 c chopped,fresh cilantro shopping list
- 3 Tb chopped red onion shopping list
- 2 Tb fresh lemon juice shopping list
- 3/4 tsp salt shopping list
- 1/2 tsp hot pepper sauce shopping list
- 1 lb plum tomatoes,seeded and chopped shopping list
- 1 med. cucumber,peeled and chopped shopping list
- 1 garlic clove shopping list
- 1 (11.5 oz) can low-sodium vegetable juice shopping list
- Relish; shopping list
- 1/4 c fine chopped red bell pepper shopping list
- 2 Tb fresh chopped cilantro shopping list
- 1 Tb fine chopped red onion shopping list
- 1 tsp fresh lemon juice shopping list
- 1 ripe,peeled avocado,diced shopping list
How to make it
- To prepare soup,cook shrimp in booiling water 2 mins or until done. Drain,rinse under cold water;coarsely chop shrimp
- Combine 3/4 c bell pepper and next 9 ingredients in a blender;process till smooth. Stir in shrimp.
- To prepare relish,combine 1/4 c red bell pepper and remaining ingredients. Top soup with relish.
