Stuffed Peppers W Jasmine Rice Recipe
This is a great recipe if you are watching your cholesterol but don't want to give up great taste. I prefer Jasmine rice when baking because it is more moist and tender.

Ingredients
  • 4 lrg. green peppers, seeded & cut in half lengthwise
  • 2 1/2 cups cooked whole grain brown organic jasmine rice
  • 1 lb. ground beef
  • 1 onion, chopped
  • 3/4 cup low sodium ketchup or pizza sauce
  • 1 tbsp. vinegar
  • 1 tsp. mustard
  • 3/4 tsp. salt
  • 1/8 tsp. pepper

Directions
  1. Arrange peppers in a baking pan.
  2. In a lrg. mixing bowl, combine the ground beef, onion, and cooked rice. Set aside.
  3. For sauce, in a bowl, combine ketchup or pizza sauce, vinegar, mustard, salt, and pepper.
  4. Stir half of the sauce into meat mixture. Reserve the rest for over the top.
  5. Spoon meat mixture into peppers, dividing evenly.
  6. Spread sauce over top.
  7. Bake uncovered 350 degrees F for 1 1/2 hours.
