How to make it

  • Grate carrots.
  • Chop celery.
  • Mix carrots, celery, raisins and lime zest.
  • Whisk honey, lime, vinegar, mustard and season with cumin salt and pepper. I added enough cumin to give the dressing a faint rusty color. I added enough vinegar to make it extra tart to combat the sweetness of all the raisins.
  • If it seems to dry, add a spoonful of mayonnaise or yogurt to make more dressing.
  • Pour over carrots, cover and chill.
