Double Chip Coconut Drops

- 1 1/4 cups sugar shopping list
- 1 cup brown sugar shopping list
- 1 cup butter shopping list
- 1 cup shortening shopping list
- 400g silken tofu shopping list
- 2 tbsp honey shopping list
- 1 tbsp vanilla shopping list
- 1 tsp coconut extract shopping list
- 3 cups flour shopping list
- 2 cups whole-wheat flour shopping list
- 1/2 cup cocoa powder, sifted shopping list
- 1/2 cup finely shredded unsweetened coconut shopping list
- 2 tsp baking soda shopping list
- 2 tsp salt shopping list
- 1/2 cup miniature chocolate chips shopping list
- 1/2 cup miniature white chocolate chips shopping list
How to make it
- In a large bowl, cream the sugars, shortening and butter until fluffy.
- In a food processor, puree tofu, honey, vanilla and coconut extract until smooth.
- Add pureed tofu to the creamed mixture and beat well.
- In separate bowl, whisk flours, cocoa powder, coconut, baking soda and salt.
- Add flour mixture to creamed mixture and mix by hand until flour just disappears.
- Fold in both types of chips.
- Wrap dough in plastic and chill a minimum of 24 hours.
- Preheat oven to 350.
- Make cookie dough balls and place onto an ungreased cookie sheet.
- Bake for 12 minutes. Cool 3 minutes on sheets then remove to a rack and cool completely.
