Simple Artichoke Egg White Omlette

- egg whites about ten shopping list
- artichokes marinated in olive oil and drained shopping list
- scallions shopping list
- avocado slices shopping list
- tomatoes chopped up shopping list
- a spirtz of fresh lemon shopping list
- pam or olive oil or butter if you prefer shopping list
- dash of salt shopping list
- pepper shopping list
- fresh cilantro (optional) shopping list
How to make it
- In a large bowl whip up ten egg whites.
- In your pan put some pam, oiive oil or butter...and saute the tomatoes, artichoke hearts, scallions and a dash of fresh lemon and salt and pepper....put aside
- Then add egg white mixture and keep cooking carefully taking a spatula and moving the sides of the eggs toward the middle gently until it looks cooked...then add the sauted mixture of tomatoes, scallions, and artichoke hearts and fold the omlette over and cover for just a few minutes....Then top with fresh avocado slices (and cilantro) if you want....
- Then pop on a plate for a fun breakfast loaded with good stuff...
