A very colorful refreshing summer dessert.

Ingredients
  • 2 cups whipping cream
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 12 coconut macaroons, crushed and toasted
  • 1/4 cup chopped pecans, toasted
  • 2 1/2 cups raspberry sherbert, softened
  • 2 1/2 cups lime sherbert, softened
  • 2 1/2 cups orange sherbet, softened
  • strawberry halves

Directions
  1. Whip cream until frothy, add sugar and vanilla, beating until soft peaks form.
  2. Fold in macaroons and pecans.
  3. Spread half of mixture into a 9 inch springform pan: freeze
  4. Spread a layer of each sherbet over whipped cream mixture allowing each layer to freeze before spreading next layer.
  5. Top with the remaining whipped cream mixture.
  6. Cover and freeze.
  7. Remove from pan and place on serving plate.
  8. Garnish with strawberries.
