How to make it

  • If cooked correctly, okra is not slimy or gummy but tender and delicious.
  • Okra has low calories, no fat and lots of fiber.
  • Steam okra according to package directions or well heated and tender.
  • Do not overcook.
  • Drain and mix in fresh chopped tomatoes.
  • Season to taste with extra virgin olive oil, minced garlic, chopped basil, lemon juice and salt and pepper to taste.
  • Fresh grated cheese is optional.
