Ingredients
  • 1 12 oz box Bow Tie Pasta (boil for 10 minutes)
  • 2 cups of Fresh Baby Spinach (blanch for 2 minutes until bright green)
  • 8 oz bag of Frozen Artichoke Hearts
  • 1/8 cup of Fresh Basil (julienned)
  • 3.25 oz can Pitted Black Olives (sliced in half)
  • 15.5 oz can Cannellini Beans (white beans) (rinsed)
  • 1/2 cup or more EVOO
  • Salt, Pepper, Onion and Garlic Powder (to taste)

Directions
  1. Boil water for Pasta, then boil for ten minutes.
  2. In mean time boil water in seperate pot for Baby Spinach and blanch for 2 minutes until bright green in color.
  3. Julienne fresh basil and slice black olives and rinse beans.
  4. Microwave Artichokes for 4 minutes.
  5. Place Spinach, Olives, Basil, Artichokes and Beans in a large bowl and mix with EVOO and seasonings.
  6. Add Drained Hot Pasta when done to bowl and toss all together, adding more oil and spices as needed.
