Amazingly quick Carbonara

- 1lb fresh tagliatelle or penne pasta shopping list
- six large egg yolks shopping list
- 6 oz of pancetta shopping list
- 6oz freshly grated parmesan cheese shopping list
- 3/4 pint of double (heavy) cream shopping list
- freshly torn basil leaves shopping list
- freshly grated black pepper shopping list
- A little olive oil (preferably extra virgin) shopping list
How to make it
- First of all, heat the olive oil in a pan and fry the pancetta until brown and crispy. Keep warm. Then bring a large pan of water to the boil with a pinch of salt and add the pasta of your choice. While the pasta is cooking, about 4 minutes, beat the egg yolks, half the parmesan and the cream together.
- Drain the pasta when 'al dente' and transfer back into the saucepan. Add the egg mixture, and keep the pan on a very low heat, stirring with a wooden spoon for about a minute, until the mixture thickens.
- Add the pancetta, stir. Pile onto warm plates and sprinkle with freshly ground black pepper and the torn basil leaves.
- If liked, serve with garlic bread.
