Amazingly Quick Carbonara Recipe
Quick and easy to make after a hard days work. Filling, tasty and good enough to serve for a dinner party.

Ingredients
  • 1lb fresh tagliatelle or penne pasta
  • six large egg yolks
  • 6 oz of pancetta
  • 6oz freshly grated parmesan cheese
  • 3/4 pint of double (heavy) cream
  • freshly torn basil leaves
  • freshly grated black pepper
  • A little olive oil (preferably extra virgin)

Directions
  1. First of all, heat the olive oil in a pan and fry the pancetta until brown and crispy. Keep warm. Then bring a large pan of water to the boil with a pinch of salt and add the pasta of your choice. While the pasta is cooking, about 4 minutes, beat the egg yolks, half the parmesan and the cream together.
  2. Drain the pasta when 'al dente' and transfer back into the saucepan. Add the egg mixture, and keep the pan on a very low heat, stirring with a wooden spoon for about a minute, until the mixture thickens.
  3. Add the pancetta, stir. Pile onto warm plates and sprinkle with freshly ground black pepper and the torn basil leaves.
  4. If liked, serve with garlic bread.
