Ingredients
  • all purpose flour 200g
  • corn flour 50g
  • icing sugar 50g
  • eggs 70g
  • custard powder 15g
  • shortening 125g
  • (custard):whole egg 240g
  • sugar 130g
  • cold water 130g
  • cold UHT milk 130g

Directions
  1. sieve dry ingredients and add shortening.
  2. rub in on slow speed until a crumble.
  3. add all eggs and continue until a a smooth paste is formed.
  4. whisk whole egg and sugar gently.
  5. add in water and milk.
  6. press the paste into the tart moulds.
  7. pour the custard into the tart shell.
  8. bake at 200C for 20-25 mins until the custard sets.
