Crazy Cracker Pie

This was apparently a WW2 recipe, made from ingredients that were not rationed. It's from our church's recipe book Old South Secrets from Puddin' Swamp. It has a dry texture--very unusual!
Ingredients
- 3 egg whites, stiffly beaten shopping list
- 1 c sugar shopping list
- 1 t baking powder shopping list
- 1 t vanilla shopping list
- 20 round HiHo crackers, crushed shopping list
- 3/4 c chopped pecans shopping list
- 1 med-sized Cool Whip shopping list
- optional - frozen flaked coconut shopping list
How to make it
- Mix sugar, baking powder, vanilla
- Add to beaten egg whites
- Fold in crackers and nuts into egg whites
- Spoon into a greased 9" pie plate
- Bake at 325 degrees for 30 minutes
- When pie is cool, spread on a layer of Cool Whip (and coconut if you like coconut)
- Chill in freezer for at least 2 hrs, but it's better if you leave it in the refrigerator for at least a day.
- ++alternate - chill, add Cool Whip right before serving
