How to make it

  • Melt 1 tablespoon butter in saucepan.
  • Saute green onion until slightly soft.
  • Adding the cognac,simmer all until reduced to about 1/2 volume.
  • Add stock,simmer all until reduced down to about 1/2 .
  • Add cream,simmer until reduced to a rich sauce..you will want at least 1 cup all together after reduced for the last time.
  • Sprinkle with sea salt and stir,keep sauce warm.
  • Dry Shark Steak.
  • Pat sea salt and fresh ground black pepper on both sides of steak.
  • Place in pan the remainder of the butter,perhaps a tad more.
  • Fry until done.
  • Pour part of the sauce on a plate,top with shark,then pour remainder of the sauce over top.
