  • Ingredients:
  • ¼ cup Margarine
  • 1 egg
  • 3 Tbs. frozen Orange juice concentrate
  • ¾ cup All-purpose flour
  • ¼ cup rolled oats
  • 2 ½ tsp. Sugar substitute
  • ¼ tsp. Baking soda
  • 1/8 tsp. Cream of tartar ( baking powder )
  • ¼ tsp. Salt
  • 1 tsp. Grated orange peel
  • ½ cup dried cranberries
  • ½ cup chopped walnuts
  • Cookie sheet
  • Non-stick cooking spray ( Pam )

Directions
  1. 1)Preheat oven to 375º.
  2. 2)Cream margarine in a medium bowl. Beat in egg and frozen orange juice concentrate.
  3. 3)Combine flour, rolled oats, sugar substitute,baking soda, cream of tartar ( baking powder ), salt and grated orange peel in a separate bowl.
  4. 4)Add dry ingredients into the creamed mixture and mix well. Stir in dried cranberries and chopped walnuts.
  5. 5)On the Cookie sheet lightly sprayed with non-stick cooking spray drop batter by teaspoonfuls on to the sheet. Bake at 375º for 8 to 10 minutes or until the bottoms of the cookies are lightly browned. Cool on a wire rack. Ready to serve or place in a cookie jar.
