Clamcakes are not fritters or pancakes. This is a typical Rhode Island recipe. Served at many Rhode Island restaurants. This was my grandmother's recipe. Always loved it when she made these.

Ingredients
  • 1 cup flour
  • 1 tsp. baking powder
  • 1/8 tsp salt
  • Dash of pepper
  • 2/3 cop clam juice
  • 1 egg,beaten
  • 1 12 ounce can chopped clams, drained
  • Vegetable oil for deep frying

Directions
  1. Combine the flour, baking powder, salt and pepper in a bowl. Mix in the clam juice, egg and clams. Batter should not be runny so add a small amount of additional flour if necessary.
  2. Preheat the oil to 375 degree. Drop the batter by teaspoonfuls into the hot oil. Deep fry until brown, turning once. Drain on paper towes and serve hot

My mouth is watering down here in Fla for RI clam cakes and clam fritters. Your recipe sounds almost like Kenyons across the bay. I sure am going to give this the RI taste test. Thanks for the yearning to come back home to Newport. Nothing like NE seafood any time you crave it! These people down here don't know what seafood really tastes like.
