How to make it

  • 1)In a bowl, combine flour, sugar, baking powder and salt. Add blueberries.
  • 2)Add milk, melted margarine and egg. Mix until dry ingredients are just moistened. Do not over beat.
  • 3)Spoon batter into paper-lined micro-safe baking or cupcake pan. Do not fill more than 2/3 up.
  • 4)Microwave at MEDIUM-HIGH power for 3 minutes. Let rest for 3 minutes.
  • 5)Microwave at HIGH power for another 2 ot 3 minutes or until muffins are done. They will still be a little soft in the center. Let them rest in pan for a couple of minutes.
  • 6)Serve them warm with margarine.

    An Update of sorts. This is yet another recipe that does not work with Orgran's Gluten Free All-Purpose Flour. Very depressing, since my next order of Arrowhead mills flour won't be coming for a week.

    Well, I butchered this recipe a wee bit. I didn't have butter, so I used oil instead (Olive, to be precise), Raisins instead of blueberries, and I added in cocoa, cinnamon and coconut, because I'm an idiot that has to improvise while trying something new. I also halved the recipe so I wouldn't waste a huge amount of ingredients. The halving was bloody hell with all the odd-numbered measurements.

    They cooled off, I tried one. The recipe is DIVINE! Not overly sweet, and just great. One of them got a nice hard top, but the other ones are all a bit soft. not undercooked at all, though. I'll definitely try this recipe again, with the proper measurements, and perhaps even with butter if the local market ever sells it organic.
