Blueberry Muffins Microwaved

- Ingredients: shopping list
- 1 ¾ cups all-purpose flour shopping list
- 1/3 cup sugar shopping list
- 2 ½ tsp. baking powder shopping list
- ½ tsp. salt shopping list
- 1cup fresh or frozen blueberries thawed shopping list
- ¾ cup milk shopping list
- 1 egg shopping list
- 1/3 cup melted margarine or butter shopping list
How to make it
- 1)In a bowl, combine flour, sugar, baking powder and salt. Add blueberries.
- 2)Add milk, melted margarine and egg. Mix until dry ingredients are just moistened. Do not over beat.
- 3)Spoon batter into paper-lined micro-safe baking or cupcake pan. Do not fill more than 2/3 up.
- 4)Microwave at MEDIUM-HIGH power for 3 minutes. Let rest for 3 minutes.
- 5)Microwave at HIGH power for another 2 ot 3 minutes or until muffins are done. They will still be a little soft in the center. Let them rest in pan for a couple of minutes.
- 6)Serve them warm with margarine.

Well, I butchered this recipe a wee bit. I didn't have butter, so I used oil instead (Olive, to be precise), Raisins instead of blueberries, and I added in cocoa, cinnamon and coconut, because I'm an idiot that has to improvise while trying something...more
