Ranier and Oatmeal Muffins

- 1 1/2 cups dry old-fashioned oatmeal shopping list
- 1 packet instant peaches & Cream flavoured oatmeal shopping list
- 1 cup warm buttermilk shopping list
- 4 egg whites shopping list
- 1/2 cup brown sugar shopping list
- 1/3 cup melted butter shopping list
- 1 cup whole wheat flour shopping list
- 1/2 tsp baking soda shopping list
- 1/2 tsp salt shopping list
- 1 tsp baking powder shopping list
- 10oz cherries, pitted and halved (chopped if using regular muffin cups) shopping list
How to make it
- Preheat oven to 400F, grease 7 jumbo or 14 regular sized muffin cups.
- In a large bowl, combine oatmeals, buttermilk, egg whites, brown sugar and melted butter. Set aside for 10 minutes.
- In a medium bowl whisk together flour, baking soda, salt and baking powder.
- Add the dry mixture to the soaked oatmeal and fold in until just combined.
- Fold in the cherries.
- Bake for 20 minutes for regular sized muffins, or 30-35 minutes for jumbo sized.
- Turn out of cups immediately and cool on a wire rack.
