Sauted Shrimp With Cranberry-citrus Salsa

- 4 pounds unpeeled, large fresh shrimp shopping list
- 1/2 cup orange juice shopping list
- 1/4 cup minced garlic, divided shopping list
- 1 tablespoon olive oil shopping list
- 1/2 teaspoon salt shopping list
- 1/4 teaspoon freshly ground pepper shopping list
- Cranberry-Citrus salsa shopping list
- Garnish: Italian parsley sprigs shopping list

- Peel shrimp, leaving tails intact; devein, if desired. shopping list
- Citrus Salsa: shopping list
- 1 pink grapefruit, peeled, sectioned, and chopped shopping list
- 2 teaspoons grated orange rind shopping list
- 1 orange, peeled, sectioned, and chopped shopping list
- 1 cup fresh cranberries, halved shopping list
- 1/2 green bell pepper, diced shopping list
- 1/4 cup chopped purple onion shopping list
- 1 garlic clove, pressed shopping list
- 2 tablespoons minced Italian parsley shopping list
- 2 tablespoons orange juice shopping list
- 1/4 teaspoon salt shopping list
How to make it
- Peel shrimp, leaving tails intact; devein, if desired.
- Combine orange juice and 2 tablespoons garlic in a shallow dish or large heavy-duty zip-top plastic bag; add shrimp. Cover or seal, and chill 2 hours, turning occasionally. Drain.
- Sauté remaining 2 tablespoons garlic in hot oil in a large skillet until tender; add shrimp, and sauté 3 to 5 minutes or just until shrimp turn pink. Remove from heat. Sprinkle with salt and pepper. Serve with Cranberry-Citrus Salsa. Garnish, if desired.
