How to make it

  • Boil the yuca with the salt~but~do not get it to soft.
  • Grind with fine blade.
  • Knead with the salt.
  • Form balls,flatten in the palm of hand and fill with stuffing.
  • Form into oval shape,pinch close,fry in hot oil.
  • For the filling:
  • Season the iguana with salt,worcestershire sauce,vinegar,capers,onion,sugar,garlic and parsley.
  • Brown in a small amount of hot oil and then add tomato paste.
  • Simmer until quite dry.
