Ingredients
  • 3 Pounds Yuca
  • Salt
  • 1 Pound Ground Iguana(or)gatosolo
  • 1 teaspoon Parsley,chopped
  • 1 Large Onion,chopped
  • 1 teaspoon Tomato Paste
  • 1 Garlic Clove,minced
  • 1 teaspoon Worcestershire Sauce
  • 1 teaspoon Salt
  • 1/8 teaspoon Sugar
  • 1 teaspoon Vinegar
  • 4 Capers

Directions
  1. Boil the yuca with the salt~but~do not get it to soft.
  2. Grind with fine blade.
  3. Knead with the salt.
  4. Form balls,flatten in the palm of hand and fill with stuffing.
  5. Form into oval shape,pinch close,fry in hot oil.
  6. For the filling:
  7. Season the iguana with salt,worcestershire sauce,vinegar,capers,onion,sugar,garlic and parsley.
  8. Brown in a small amount of hot oil and then add tomato paste.
  9. Simmer until quite dry.

  11. **Note** This is a Panamanian recipe,the Iguana(and,or) Gatosolo(A White Nosed Coati)are true to this particular recipe.

I Have A Special Fondness For Panama Also. I Do Some Mission Work With The Kuna Indians Down There.


Sounds, ah, mouthwatering...

You know, I'd prefer a few more seasonings to my iquana - like, oh, apricot, perhaps some brown sugar and sliced banana, and raisins.

Where did you get this recipe? Just curious.

(Bet you could substitute alligator.)
