Grilled Shrimp With Cilantro Pesto

- 1 c olive oil shopping list
- 2/3 c coarse chopped cilantro shopping list
- 1/2 c coarse chopped fresh parsley shopping list
- 1/2 c coarse chopped green onions shopping list
- 6 Tb roasted ,salted,pumpkin seeds shopping list
- 6 Tb lime juice shopping list
- 4 garlic cloves shopping list
- 1 serrano chile,seeded,deveined shopping list
- 1 tsp salt shopping list
- 48 shelled,deveined uncooked large shrimp (21-30 ct) shopping list
How to make it
- Pulse all ingredients except shrimp in food processor until thick smooth paste forms.
- Place shrimp in large bowl;coat with pesto. Cover and refrigerate 1 to 6 hours
- Soak 24 (10" wooden skewers in water 30 mins. Heat grill Remove shrimp from marinade;discard marinade. Thread shrimp onto each skewer.
- Grill shrimp,covered,over med-high heat 4 to 6 mins or till shrimp turn pink,turning once.
