Ingredients
  • 1 c olive oil
  • 2/3 c coarse chopped cilantro
  • 1/2 c coarse chopped fresh parsley
  • 1/2 c coarse chopped green onions
  • 6 Tb roasted ,salted,pumpkin seeds
  • 6 Tb lime juice
  • 4 garlic cloves
  • 1 serrano chile,seeded,deveined
  • 1 tsp salt
  • 48 shelled,deveined uncooked large shrimp (21-30 ct)

Directions
  1. Pulse all ingredients except shrimp in food processor until thick smooth paste forms.
  2. Place shrimp in large bowl;coat with pesto. Cover and refrigerate 1 to 6 hours
  3. Soak 24 (10" wooden skewers in water 30 mins. Heat grill Remove shrimp from marinade;discard marinade. Thread shrimp onto each skewer.
  4. Grill shrimp,covered,over med-high heat 4 to 6 mins or till shrimp turn pink,turning once.
