A tasty alternative to regular mashed potatoes, sure to dress up any dinner.

Ingredients
  • 4 cups hot mashed potatoes
  • 1 small onion minced
  • 1 small green pepper chopped very finely
  • 2 tbsp of dry fajita powder
  • 1 cup shredded pepper jack cheese

Directions
  1. Stir the onions, peppers & seasoning into the hot mashed potatoes and sprinkle with the cheese.
  2. Place potatoes into an oven, 10 minutes or until the cheese melts
