Crusted Orange Roughy

- 4 orange roughy fillets shopping list
- 1.5 Cups Fresh grated Pecorino Romano shopping list
- 1.5 Cups of Progresso Parmesan bread crumbs shopping list
- 1 egg shopping list
- salt (not too much) shopping list
- pepper shopping list
- olive oil for baking dish shopping list
How to make it
- Put the Roughy in a baking dish lightly coated with olive oil.
- Mix all other ingredients in bowl (egg, bread crumbs, 1 cup Pecorino, salt and pepper); it will be lumpy.
- With a spoon or fork- mash on a layer of the crusty mix atop of the Roughy fillets.
- Sprinkle some more of the Pecorino on top.
- Bake for 20-25 minutes until golden brown.
