Ingredients
  • 4 Orange Roughy Fillets
  • 1.5 Cups Fresh grated Pecorino Romano
  • 1.5 Cups of Progresso Parmesan bread crumbs
  • 1 egg
  • Salt (not too much)
  • Pepper
  • Olive oil for baking dish

Directions
  1. Put the Roughy in a baking dish lightly coated with olive oil.
  2. Mix all other ingredients in bowl (egg, bread crumbs, 1 cup Pecorino, salt and pepper); it will be lumpy.
  3. With a spoon or fork- mash on a layer of the crusty mix atop of the Roughy fillets.
  4. Sprinkle some more of the Pecorino on top.
  5. Bake for 20-25 minutes until golden brown.
