How to make it

  • Put the Roughy in a baking dish lightly coated with olive oil.
  • Mix all other ingredients in bowl (egg, bread crumbs, 1 cup Pecorino, salt and pepper); it will be lumpy.
  • With a spoon or fork- mash on a layer of the crusty mix atop of the Roughy fillets.
  • Sprinkle some more of the Pecorino on top.
  • Bake for 20-25 minutes until golden brown.
