How to make it

  • Carmelize Sugar in meduim sauce pan on high heat until golden brown. Do not burn as the caramel will taste bitter. Pour in to thin aluminum pie or loaf pan and put to the side.
  • Combine remaining ingredients with hand mixer or blender and strain into caramel. It's important that you strain the mixture. This is what creates the silky consistency.
  • Seal pie pan with foil and place in larger baking pan filled half-way with water. Bake at 375 for 45 minutes.
  • Regrigerate for several hours to overnight so that flan will set.

I love flan! This sounds like a breeze! It's also a great comfort food desert for those on gluten free diets.
