Ingredients
  • 6 Tb butter,softened
  • 1 c Cofectioners sugar
  • 1 egg 2 squares (1oz. ea) unsweetened chocolate,melted and cooled
  • 3 tsp vanilla extract
  • 1-1/2 c flour
  • 1/2 tsp baking soda
  • Filing:
  • 1/3 c cream cheese,softened
  • 1 tsp vanilla
  • 1 c flaked coconut
  • 1/2 c finely chopped pecans

Directions
  1. In a small bowl,cream butter and confecioners sugar until light and fluffy. Beat in the egg,chocolate and vanilla. Combine flour and baking soda,gradually add to creamed mixture and mix well. Refrigerate 1 hour.
  2. In another bowl,combine cream cheese and vanilla. Stir in coconut and nuts till blended. Refrigerate 1 hour
  3. Shape dough into an 8-1/2x6" rectangle. Shape filling into an8-1/2" log;place on dough. Wrap dough around filling'sealing the seam. Wrap in plastic wrap and refrigerate for 2-3 hours till firm.
  4. Cut into 1/4" slices. Place 2" apart on parchment -lined baking sheets. Bake at 375 for 12 mins or till set. Remove to wire racks.
