JKs Monterey Jack Pasta Salad

- 1 lb rigatoni noodles shopping list
- 12 oz grape tomatoes shopping list
- 8 oz watercress (leaves only) shopping list
- 1/4 c chopped basil shopping list
- 1 small shallot shopping list
- 1 clove garlic shopping list
- 2 lemons shopping list
- 1/2 c olive oil shopping list
- 8 oz monterey jack cheese shopping list
- salt & pepper shopping list
How to make it
- Bring water to boil an salt
- add pasta
- while pasta boils, prepare watercress, basil & dressing
- remove watercress & basil leaves and set aside
- mince garlic & shallot and add to a large mixing bowl
- add olive oil & juice of 2 lemons & whisk
- add grape tomatoes and stir
- add watercress and basil and stir
- when noodles are al dente, drain and immediately toss with dressing and vegetables
- cover with saran wrap and let greens wilt
- place cold monterey jack cheese in freezer
- when greens are wilted remove cheese from freezer and dice in to small cubes
- toss cheese with pasta, cover with saran wrap and let come to room temperature
