Tangy stuffed Meat Loaf

- 1 ½ lbs ground beef. ( I buy meatloaf mix or mix ground beef and ground pork) shopping list
- ½ cup catsup shopping list
- ½ tsp powdered mustard shopping list
- 2 Tbsp brown sugar shopping list
- 4 tsp worcestershire sauce shopping list
- 2 tsp seasoned salt shopping list
- 1 ½ tsp onion powder shopping list
- ¼ tsp garlic powder shopping list
- ¼ tsp ground black pepper shopping list
- 1 egg shopping list
- 1 ½ cup Wheat Chex cereal finely ground ( I used Chex mix, the original or cheese or anyone that has flavor you like, not sweet though) shopping list
- Appox. 2 cups of shredded cheese of your choice. ( I like cheddar or smoked gouda) shopping list
- Depending on the chex mix I use, that will determine the flavor of the cheese. shopping list
How to make it
- In large bowl combine catsup, brown sugar and mustard . Reserve 4 TBS of mixture for topping. To remaining mixture add Worcestershire sauce, salt, onion, garlic powder, and egg. Blend well. Stir in Chex mix. Add ground meat. Mix well. Spread mixture evenly out on parchment paper in a rectangle. Lay shredded cheese down the middle. Grab end of parchment paper and roll the meat ends up to meet each other. Length wise. Use the outside of the paper to assist in sealing the seam. Tuck the remaining ends under to resemble meatloaf and put into a loaf pan. Bake in 350 degree oven for 65 minutes. Spread top with reserved catsup mixture. Bake additional 15 min. makes 6 servings
- If you want to make this low cal, use low fat ground beef and only ¼ cup of ground pork. You need a little fat for moisture and flavor. Most meat loaf mixes don’t use low fat beef. I will use the splenda brown sugar sometimes. Enjoy!!!
